RETHIMNO WHITE
PROTECTED GEOGRAPHICAL INDICATION (PGI) OF RETHIMNO
Varieties: Vidiano 50% and Thrapsathiri 50%.
Category: White Dry Regional Wine, Organic Farming.
Location: Koukoulias 610m altitude.
Winemaking: Classic white winemaking. Fermented at 16°C. Aged for 4 months in french oak barrels.
Character: Clear yellow-gold color with stone fruits aromas and sense of barrel. Full body with intense acidity. This is an excellent accompaniment to fish and white meats and traditional Cretan dishes. (DIO Certification).

RETHIMNO RED
PROTECTED GEOGRAPHICAL INDICATION (PGI) OF RETHIMNO
Varieties: Kotsifali 60% and Liatiko 40%.
Category: Red Dry Regional Wine, Organic Farming.
Location: Koukoulias 610m altitude.
Winemaking: Classic red winemaking. Fermented at 25°C and remain for 10 days in grape pomace. SYRAH aged for 10 months in french oak barrels and KOTSIFALI in inox tank.
Character: Ruby red color with pepper aromas and red fruits and full aftertaste. This is an excellent accompaniment to meat and red sauce dishes as well as most traditional Cretan meat dishes. (DIO Certification).

KORIFI KRIONERITI
Variety: 100% Vidiano variety.
Category: Dry white organic wine.
Local wine of Crete.
Vineyard: Mountain vineyards at Kali Sikia at 600m altitude. Mid September harvest.
Winemaking: Classic white winemaking from frozen grapes for the release of all aromas in the first stage. Fermented at 18 degrees for 10 days and left in the fine wine lees for 60 days to enrich the body and the aroma.
Character: Clear yellowish-green color, aromas of citrus and white flowers as well as aromas of white tropical fruits. Full body with a balanced acidity due to the high altitude of the vineyards. This is an excellent accompaniment to fish and seafood as well as white meats and traditional Cretan dishes. (DIO Certification).

BALLERINA
Variety: 100% Liatiko variety
Category: Dry rose organic wine
Local wine of Crete
Vineyard: Mountain vineyards at Kali Sikia at 550m altitude. Mid September harvest.
Winemaking: Grapes are crushed and pressed for 5 hours to obtain the rose color and then classic winemaking and fermentation at 16 degrees for 10 days and left in the fine wine lees for 15 days to enrich the body and the structure of the wine.
Character: Pal rose color. Aromas of blackberries and strawberries as well as aromas of red tropical fruits; full body with a balanced acidity due to the high altitude of the vineyards. This is an excellent accompaniment to fish and seafood as well as white meats and traditional Cretan dishes. (DIO Certification).

Winemaking: Classic red winemaking and left in the wine lees for 7 days for the release of all aromas. Fermented at 25 degrees for 10 days.
Character: Clear ruby red color. Aromas of red fruits. Complex body with balanced acidity due to the high altitude of the vineyards. This is an excellent accompaniment to meat and red sauce dishes as well as most traditional Cretan dishes. (DIO Certification).

Winemaking: Classic red winemaking and left in the wine lees for 10 days for the release of all aromas in the first stage. Fermented at 25 degrees for 10 days in separate vats and left in the fine wine lees for 60 days to enrich the body and the aroma. They are then mixed together.
Character: Clear ruby red color. Aromas of red fruits and aged in barrels for 6 months. Full body with a balanced acidity due to the high altitude of the vineyards. This is an excellent accompaniment to meat and red sauce dishes as well as most traditional Cretan dishes. (DIO Certification).

Sweet Red Wine
LIASTO
Organic product from the choice red Cretan varieties Liatiko and Kotsifali. Since the Minoan era, these 2 historic varieties have produced fine wines, with intense sweet aromas of dried fruits, raisins and honey, the color of dark caramel and the taste of Crete! LIASTO is a fine wine made from over-ripe red, sun-dried grapes (dried in the sun for 6-8 days). It’s aged in oak barrels, with the use of traditional techniques. Serve at 10-12° C. Produced from carefully selected organic grapes of the highest quality, free of GMOs (DIO Certification).
